炒粿條【Char Kuey Teow】

炒粿條【Char Kuey Teow】的做法,在家也能做,鍋氣十足,非常好吃

炒粿條醬汁:醬油:⅔ 杯、黑醬油:1 tbsp、蚝油:2 tbsp、魚露:2 tsp、糖:1 tsp

材料(一人分量):粿條適量、豆芽適量、青蔥適量、蝦3隻(用少許醬油和胡椒粉腌制一下)、雞蛋1粒、蒜頭茸3瓣、辣椒糊適量、魚餅適量(切片)(隨意)、臘腸適量(切片)(隨意)、鮮蛤適量(隨意)、炒粿條醬汁 1湯匙~1.5湯匙、胡椒粉少許

做法:

1、將炒粿條醬汁混合均勻在一個小碗備用。

2、燒熱油,爆香蒜頭茸,加入魚餅、蝦仁和臘腸炒。

3、加入一半的豆芽兜炒。

4、接著加入粿條同時加入1湯匙~1.5湯匙的醬汁和辣椒糊大火快速炒均勻。

5、把粿條推到一旁,倒入一小匙油燒熱,把蛋打下,滴一點醬汁和撒上胡椒粉。

6、之後把粿條蓋在蛋上,同時加入另一半的豆芽、青蔥及鮮蛤。

7、快速兜炒均勻後就可上桌。

【Char Kuey Teow】

Char Kway Teow Sauce: Soy Sauce: ⅔ cup, Dark Soy Sauce: 1 tbsp, Oyster Sauce: 2 tbsp, Fish Sauce: 2 tsp, Sugar: 1 tsp

Ingredients (for one person): appropriate amount of kuey teow, appropriate amount of bean sprouts, appropriate amount of shallots, 3 shrimps (marinate with a little soy sauce and pepper), 1 egg, 3 cloves minced garlic, appropriate amount of chili paste, appropriate amount of fish cake (sliced) (optional), appropriate amount of Chinese sausage (sliced) (optional), appropriate amount of fresh clams (optional), 1 to 1.5 tablespoons of fried kway teow sauce, a little pepper

practice:

1. Mix the fried kway teow sauce evenly in a small bowl and set aside.

2. Heat oil, saute minced garlic until fragrant, add fish cakes, shrimps and sausages and fry.

3. Add half of the bean sprouts and stir fry.

4. Then add kuey teow and add 1 tbsp~1.5 tbsp of sauce and chili paste, stir fry quickly over high heat.

5. Push the kuey teow aside, pour in a teaspoon of oil and heat it up, crack the egg, drip a little sauce and sprinkle with pepper.

6. Then put the kuey teow on the egg, and add the other half of the bean sprouts, shallots and fresh clams at the same time.

7. Quickly stir fry evenly and serve.
