娘惹仁當雞(Rendang Chicken)的做法,連吃2大碗米飯!學會做給家人吃!

材料A:

雞:1隻(斬塊)

椰絲:100克(分兩份)

馬鈴薯:500克(約4粒)

辣椒糊:100克(可買包裝)

椰子:1粒(取濃椰漿)

材料B:(攪碎)

石古子:3粒

香茅:5支

黃姜:1寸

南姜:3片

老薑:2寸

紅蔥頭:15粒

蒜頭:5瓣(切茸)

調味料:

白糖:3小匙

鹽:1 ½ 小匙

雞精粉:2小匙

做法:

1. 雞肉加入1小匙鹽,腌15分鐘,加入水中汆燙片刻,取出,炒香椰絲至金黃色,待用。

2. 馬鈴薯去皮,切塊,炒至金黃色,取出備用。鍋中燒熱2大匙油,以小火炒至干身。盛起備用。

3.鍋中燒熱3大匙油,以小火爆香材料B,然後加入調勻的辣椒糊、50克椰絲和調味料炒香。

4.加入雞塊,炒片刻,分數次加入濃椰漿。加入馬鈴薯塊,小火煮25分鐘或雞肉熟透。起鍋。

5.撒上剩餘的椰絲點綴即可。

Material A:

Chicken: 1 (cut into pieces)

Shredded coconut: 100 grams (divided into two)

Potatoes: 500 grams (about 4 pieces)

Chili paste: 100 grams (available in packages)

Coconut: 1 piece (take thick coconut milk)

Ingredients B: (crushed)

Shiguzi: 3 grains

Lemongrass: 5 sticks

Turmeric: 1 inch

Galangal: 3 slices

Ginger: 2 inches

shallots: 15

Garlic: 5 cloves (finely chopped)

seasoning:

Sugar: 3 tsp

Salt: 1 ½ tsp

Chicken powder: 2 tsp

practice:

Add 1 tsp salt to the chicken, marinate for 15 minutes, add in water and blanch for a while, remove, fry shredded coconut until golden brown, set aside.

Peel potatoes, cut into cubes, fry until golden brown, remove and set aside. Heat 2 tablespoons of oil in a pan and fry over low heat until dry. Stock up.

Heat 3 tbsp oil in a wok, sauté ingredient B over low heat until fragrant, then add in the mixed chili paste, 50g shredded coconut and seasonings and saute until fragrant.

Add the chicken pieces, fry for a while, then add the thick coconut milk in batches. Add potato wedges and simmer for 25 minutes or until chicken is cooked through. Get the pot.

Garnish with the remaining shredded coconut.
