材料:
魔鬼魚:1 只(700~1000g)
黑糖 (brown sugar):1 1/2 茶匙
鹽:少許
檸檬:1 個 (取汁)
菜油:2 湯匙
亞叄醬:1 湯匙
溫水:250 ml
香蕉葉:1 大片 (可用鋁紙代替)
牙籤:4 支
酸柑:3~4 粒(切半)
洋蔥絲:適量
香菜:適量
紅蔥: 8 粒 (去皮)
蒜頭:4 粒 (去皮)
姜:1 寸 (去皮)
香茅:2 棵 (取白色部位)
辣椒干:4~6 根 (熱水泡軟)
馬來煎:1 1/2 茶匙
辣椒醬:3 湯匙
做法:
把魔鬼魚塗上鹽和檸檬汁, 放一邊腌制10分鐘。
用一個小碗把亞叄醬和250ml溫水混合均勻。
把叄巴醬料 混合一起攪碎。
大火燒熱油, 爆香攪碎的叄巴醬料, 約3~5分鐘。
再加入混合好的亞叄醬水, 糖和鹽, 攪拌均勻,調中火, 慢慢煮直濃縮, 即可離火待涼。
烤箱預熱200ºC。
把香蕉葉泡在熱水中, 取出用干布抹乾,再刷上一層菜油。
取一半叄巴醬料鋪在香蕉葉在上, 然後把魚鋪在叄巴醬料上,再把剩下一半的叄巴醬料鋪在魚身上。
把香蕉葉和魚包好, 用牙籤固定著。
放在烤架上烘10~15分鐘左右(隨魚的厚度調整烘烤時間),兩面都翻烤直熟即可。
取出放在盤上, 把香蕉葉打開, 灑上洋蔥絲和香菜。食用之前擠些酸柑汁即可。

Banana leaf: 1 large piece (can be replaced with aluminum foil)
Toothpicks: 4
Lime: 3~4 pieces (cut in half)
Shredded onion: appropriate amount
Coriander: appropriate amount
Shallots: 8 pieces (peeled)
Garlic: 4 pieces (peeled)
Ginger: 1 inch (peeled)
Lemongrass: 2 (take the white part)
Dried chili: 4~6 stalks (soaked in hot water to soften)
Malay Fried: 1 1/2 tsp
Chili Sauce: 3 tablespoons
practice:
Coat the stingrays with salt and lemon juice and set aside to marinate for 10 minutes.
Mix assam paste and 250ml warm water in a small bowl.
Mix together the sambal paste.
Heat oil over high heat, saute the sambal paste until fragrant, about 3~5 minutes.
Then add the mixed assam paste water, sugar and salt, stir well, turn to medium heat, cook slowly until concentrated, then remove from heat and let cool.
Preheat oven to 200ºC.
Soak the banana leaves in hot water, take out and wipe dry with a dry cloth, then brush with a layer of vegetable oil.
Spread half of the sambal sauce on top of the banana leaves, then spread the fish on top of the sambal sauce, and spread the remaining half of the sambal sauce on top of the fish.
Wrap the banana leaves and fish and secure with toothpicks.
Put it on the grill and bake for about 10-15 minutes (adjust the baking time according to the thickness of the fish), and cook on both sides until cooked.
Remove and place on a plate, open the banana leaves and sprinkle with shredded onion and cilantro. Squeeze some lime juice before serving.
